In Trinidad and Tobago, this is the ultimate in street food. It is called a doubles. People eat it standing at the side of the road next to the food carts that sell them or it can be wrapped and placed in brown bags to go.
It is a Sunday morning breakfast for many persons.
I love them.
A doubles consists of two flour crepes (barah) that are fried to a light brown colour. This is then put on paper and a spoonful of channa is placed on the barah. On top of that, the customer can have any number of dressings; pepper, onions, kuchela, seasonings, sweet tamarind sauce.
I particularly like sweet sauce and onions.
